Salmon Dill Pasta

Introduction

This is a family favorite dish, easy to prepare, and combines the amazing flavors of our Sockeye Salmon with a creamy twist.

If you have additional time and/or smoked salmon, we have found this makes this dish even more savory!

Salmon Dill Pasta

Steps

  • Step 1: Bring the cream and 1/2 of the butter to a simmer in a small saucepan. Add 1 teaspoon of salt and nutmeg, continue to simmer until cream is reduced by one third.

  • Step 2: Bring 4 quarts water to a boil in a large pot, add remaining 2 tablespoons of salt (6 teaspoons), and start cooking noodles.

  • ALTERNATE NOODLE OPTION: Zuchinni "Zoodles" have become a house favorite. You can purchase already made zoodles or make them yourslef.  We pan fry with olive oil in small batches and keep warm in the oven at 200 degrees F until the sauce is ready!

  • Step 3: Stir grated Parmesan cheese with the sauce, and then add the 2+ cups of flaked salmon along with 1/3 cup of fresh dill (key is to purchase fresh not dried dill).

  • Step 4: Drain the pasta (or pull your cooked zoodles from the oven), add in remaining butter (2 tablespoons) to your hot pan, and toss to coat the pasta with the butter.

  • Step 5: Divide up the pasta evenly across all (6) plates, and top with the creamy dill pasta sauce, garnish with a sprig of fress dill, and ENJOY!

Ingredients

  • (2) cups of Heavy Cream

  • (4) tablespoons of Butter

  • (7) teaspoons of Salt

  • Pinch of freshly grated nutmeg

  • (1) Pound fresh pasta - spinach or zuchinni zoodles

  • (1) tablespoon grated Parmesan cheese

  • (2) cups of flaked Sockeye Salmon - poached or smoked (remove skin and bones) ~ (2) Ocean Range Fillets or 1-Package of Sockeye Salmon

  • (1/3) cup of chopped fresh dill + additional for garnish
